Arugula and radicchio with grapes, goat cheese, and Champagne vinaigrette

This bright, fresh salad has a little bit of everything going on: sweet, salt, cream, and crunch. It's gorgeous-looking and can be made in just 15 minutes. We love the combination of crunchy radicchio and spicy arugula. It nicely complements the Champagne vinegar, honey, fresh chives, red grapes, and crumbled goat cheese. Arugula lends a peppery bite, but other greens work well, too, such as romaine or butter lettuce or even a bag of mixed greens. Toasted almonds are the finishing touch that provide color and contrast, but feel free to use pecans or walnuts instead if you don't have any.

Olive oil
2 Tbsp, extra virgin
Vinegar
1 Tbsp, champagne variety
Honey
1 Tbsp
Chives
1 Tbsp, fresh, minced
Water
1 Tbsp, warm
Kosher salt
½ tsp
Black pepper
⅛ tsp
Arugula
4 cup(s), baby variety
Radicchio
2 cup(s), shredded, thinly sliced
Grapes
1⅓ cup(s), red, seedless, halved
Semisoft goat cheese
¼ cup(s), crumbled
Sliced almonds (unsalted, no oil or sugar added)

Instructions

In a small bowl, whisk together oil, vinegar, honey, chives, water, salt and pepper.

When ready to serve, toss arugula and radicchio together in a serving bowl; pour dressing over top and toss to coat. Pile greens evenly across four salad plates; garnish each with 1/3 cup grapes, 1 tablespoon cheese and 1 tablespoon almonds. Yields 1 salad per serving.
