Red quinoa salad with oranges

A tangle of tempting textures and flavors best describes this unusual salad. Whole-grain, gluten-free quinoa is the perfect foil for the slightly bitter radishes, juicy navel oranges, and salty feta. If you’ve not had radish tops, this is your chance—you’ll love ‘em.


Ingredients
Uncooked quinoa
1 cup(s), red variety, rinsed
Orange
3 medium, navel variety
Radishes
4 large, with tops, halved and thinly sliced and tops torn
Low fat red wine vinaigrette salad dressing
¼ cup(s)
Table salt
½ tsp
Black pepper
¼ tsp
Crumbled feta cheese

Prepare quinoa according to package directions. Let cool.

Meanwhile, halve and squeeze juice from 1 orange (you should have about 1/3 cup). Pour into salad bowl. Cut sections from remaining 2 oranges and add to bowl.

Add cooled quinoa, radishes and tops, vinaigrette, salt, and pepper to orange mixture and gently toss until mixed well. Sprinkle with feta.
