Here, we've added coconut flakes to a sweet medley of fresh fruit, making it a nontraditional but entirely delicious topping. But, don't stop there. Add some non-fat Greek yogurt to not only balance out the sugar but also elevate this dish to an ideal breakfast or full-fledged dessert for one. To kick it up a notch, you can throw in some minced jalapeño peppers to the salsa, too. This transitions the dish into more of a savory delight, which is equally as good of an idea!


Ingredients
Pineapple
½ cup(s), Golden variety, diced
Strawberries
3 medium, diced
Fresh mint leaves
1 tsp, chopped
Lime zest
⅛ tsp, grated
Plain fat free Greek yogurt
½ cup(s)
Unsweetened coconut flakes
1 Tbsp, toasted
Instructions

Combine pineapple, strawberries, mint and lime zest in a small bowl. Either top with yogurt and sprinkle with coconut, or spoon yogurt into a serving glass and top with fruit and coconut.
